  • 1 cup mashed bananas
  • 1/2 cup honey
  • 1/3 cup melted coconut oil
  • 2 large eggs
  • 1 1/2 cups whole wheat flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the grated zucchini and mashed bananas.
  3. Stir in the honey and melted coconut oil.
  4. Add the eggs and vanilla extract, mixing well.
  5. In a separate bowl, mix the dry ingredients: whole wheat flour, baking powder, baking soda, salt, and cinnamon.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Pour the batter into a greased muffin tin.
