Zucchini Pizza Casserole

  • 4 cups shredded zucchini
  • 1 cup marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup chopped pepperoni
  • 1/4 cup grated parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the shredded zucchini, Italian seasoning, garlic powder, salt, and pepper.
  3. Layer half of the zucchini mixture in a greased baking dish.
  4. Add half of the marinara sauce followed by half of the mozzarella cheese and half of the pepperoni.
  5. Repeat the layers with the remaining ingredients.
  6. Sprinkle the grated parmesan cheese on top.
  7. Bake for 30-35 minutes, until the top is golden and bubbly.
  8. Let it cool for a few minutes before serving.

Notes

  • Can substitute ground beef or sausage for pepperoni for added flavor.
  • For a healthier version, reduce cheese or use low-fat cheese.
