Zucchini Pizza Casserole

A delicious and healthy alternative to traditional pizza.

  • 2 cups shredded zucchini
  • 1 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1/4 cup sliced black olives
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil
  • 1/2 pound ground turkey or beef (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add onions and bell peppers, sauté until softened.
  3. If using, add ground turkey or beef and cook until browned. Drain excess fat.
  4. Stir in shredded zucchini, pizza sauce, olives, and Italian seasoning. Mix well.
  5. Transfer the mixture to a baking dish and top with shredded mozzarella cheese.
  6. Bake for 25-30 minutes until the cheese is melted and bubbly.
  7. Let cool for a few minutes before serving.

Notes

  • For a vegetarian option, omit the meat.
  • Feel free to add or substitute your favorite pizza toppings.
