Zuppa Toscano

A delicious and healthy version of the traditional Zuppa Toscano made with turkey bacon and chicken ham.

Ingredients

  • 4 cups chicken broth
  • 1 pound turkey bacon
  • 1 cup chicken ham, diced
  • 2 cups kale, chopped
  • 3 potatoes, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onion and sauté until translucent.
  2. Add garlic and red pepper flakes, cooking for an additional 1-2 minutes.
  3. Stir in the turkey bacon and chicken ham, cooking until warmed through.
  4. Add the chicken broth and potatoes, bringing to a boil.
  5. Once boiling, reduce heat and simmer until the potatoes are tender.
  6. Stir in the kale and cook for another 5 minutes.

  • Feel free to add other vegetables like carrots or celery.
