Best Slow Cooker Chicken Pot Pie

A comforting and easy-to-make slow cooker chicken pot pie.

  • 1 pound boneless, skinless chicken breasts
  • 1 cup frozen peas and carrots
  • 1 cup diced potatoes
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1 package refrigerated pie crusts

Instructions

  1. Place chicken, peas and carrots, diced potatoes, onion, garlic, thyme, and black pepper in the slow cooker.
  2. In a separate bowl, whisk together the cream of chicken soup and chicken broth, then pour over the chicken and vegetables.
  3. Cover and cook on low for 6-7 hours or until the chicken is cooked through.
  4. Once cooked, shred the chicken and stir everything together.
  5. Roll out the pie crusts and place one on top of the mixture in the slow cooker, covering it completely.
  6. Cover and cook on high for an additional 30 minutes, until the crust is golden.

Notes

  • This dish is great for leftovers and can be stored in the refrigerator for a few days.
