  • 1 tablespoon olive oil
  • 1 cup gorgonzola cheese, crumbled
  • 1 cup brie cheese, sliced
  • 1 pre-made tart shell
  • 2 eggs
  • 1/2 cup heavy cream
  • 1 teaspoon thyme

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and add sliced onions.
  3. Cook onions, stirring occasionally, until they are caramelized, about 20 minutes.
  4. In a mixing bowl, whisk together eggs and heavy cream.
  5. Add thyme, gorgonzola, and caramelized onions to the egg mixture, stirring to combine.
  6. Pour the mixture into the tart shell and layer brie on top.
  7. Bake for 30-35 minutes until the tart is set and golden brown.
