  • 2 pounds baby potatoes
  • 1 tablespoon Dijon mustard
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat and brown the chicken breasts on both sides.
  3. Remove chicken from skillet and place in a baking dish.
  4. Add potatoes to the skillet and cook for about 5 minutes.
  5. In a bowl, mix Dijon mustard and heavy cream, then pour over the chicken and potatoes.
  6. Season with salt and pepper, then bake for 25-30 minutes.
  7. Serve warm, drizzled with sauce.
