  • 1 pound turkey bacon, chopped
  • 1 onion, diced
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 3 cups egg noodles
  • 2 bay leaves
  • 1 teaspoon thyme
  • 2 cups shredded rotisserie chicken
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
  2. Add onion, carrots, and celery. Sauté until vegetables are tender.
  3. Add garlic and sauté for another minute.
  4. Pour in chicken broth, then add bay leaves and thyme. Bring to a boil.
  5. Add egg noodles and cook according to package instructions.
  6. Stir in shredded chicken and lemon juice. Season with salt and pepper.
  7. Remove bay leaves before serving.
