Cozy Autumn Wild Rice Soup

Ingredients

  • 1 cup wild rice
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 8 cups vegetable broth
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 bay leaf
  • 2 cups kale, chopped
  • 1 cup mushrooms, sliced
  • 1 cup cream (or coconut milk)

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the onion, carrots, and celery; sauté until softened.
  3. Stir in garlic, thyme, and rosemary, cooking for another minute.
  4. Add the wild rice and vegetable broth; bring to a boil.
  5. Reduce heat, cover, and simmer for about 45 minutes.
  6. Add kale and mushrooms; cook until they are tender.
  7. Stir in cream and season with salt and pepper to taste.
  8. Remove the bay leaf before serving.
