  • 1/2 cup brown sugar (for streusel)
  • 1/2 cup oats (for streusel)
  • 1/4 cup flour (for streusel)
  • 1/4 cup melted butter (for streusel)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix all the dry ingredients including flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the eggs, orange juice, melted butter, and vanilla extract.
  4. Combine the wet and dry ingredients, gently folding in the cranberries.
  5. For the streusel, mix together brown sugar, oats, flour, and melted butter until crumbly.
  6. Fill muffin cups with batter, then sprinkle with streusel on top.
  7. Bake for 20-25 minutes until golden brown.

Notes

  • For a sweeter muffin, add more sugar to the batter.
