Creamy Tuscan Salmon

Ingredients

  • 4 salmon fillets
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season the salmon fillets with salt and pepper and add to the skillet. Cook for about 5 minutes on each side or until cooked through. Remove and set aside.
  3. In the same skillet, add minced garlic and sauté for 1 minute.
  4. Add cherry tomatoes and cook until they start to soften.
  5. Pour in heavy cream and stir in the Parmesan cheese until melted and smooth.
  6. Add spinach and Italian seasoning, cooking until spinach is wilted.
  7. Return the salmon to the skillet, spooning the sauce over the top. Cook for another 2 minutes.
  8. Serve warm.
