- 4 salmon fillets
- 2 cups fresh spinach
- 1 cup cherry tomatoes, halved
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Heat olive oil in a skillet over medium heat.
- Season the salmon fillets with salt and pepper and add to the skillet. Cook for about 5 minutes on each side or until cooked through. Remove and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute.
- Add cherry tomatoes and cook until they start to soften.
- Pour in heavy cream and stir in the Parmesan cheese until melted and smooth.
- Add spinach and Italian seasoning, cooking until spinach is wilted.
- Return the salmon to the skillet, spooning the sauce over the top. Cook for another 2 minutes.
- Serve warm.
