Creamy Tuscan Salmon

A delicious and creamy salmon dish with a touch of turkey bacon.

Ingredients

  • 2 fillets salmon
  • 4 slices turkey bacon
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes
  • 2 cups spinach
  • 2 cloves garlic
  • 1/4 cup parmesan cheese
  • 1 tablespoon olive oil
  • salt to taste
  • pepper to taste

Instructions

  1. Cook the turkey bacon until crispy, then set aside.
  2. In the same pan, add olive oil and sear the salmon until cooked through. Remove and set aside.
  3. Add minced garlic and sun-dried tomatoes to the pan, sauté for a couple of minutes.
  4. Pour in the heavy cream, stirring well, then add spinach and parmesan, allowing the mixture to thicken.
  5. Return the salmon to the pan, top with chopped turkey bacon, and serve.

Notes

  • Feel free to substitute regular bacon if you prefer.
  • This dish pairs well with pasta or rice.
