Crock Pot Chicken Stew

A delicious and hearty Crock Pot Chicken Stew that’s perfect for any day of the week.

Ingredients

  • 2 pounds chicken thighs
  • 4 cups chopped vegetables (carrots, celery, potatoes)
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Place the chicken thighs in the bottom of the crock pot.
  2. Add the chopped vegetables, onion, and garlic on top of the chicken.
  3. Pour in the chicken broth and add the thyme, Italian seasoning, salt, and pepper.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through and vegetables are tender.
  5. Shred the chicken, stir everything together, and serve hot.

Notes

  • For extra flavor, add a splash of white wine to the broth.
  • Feel free to use any vegetables you have on hand.
