Easy Asian Cucumber Salad

A light and refreshing Asian cucumber salad that is simple to prepare and perfect as a side dish.

Ingredients

  • 2 cucumbers
  • 1 tablespoon salt
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1 clove garlic, minced
  • 1 teaspoon sesame seeds
  • 2 green onions, chopped

Instructions

  1. Slice cucumbers thinly and sprinkle with salt. Let sit for 10 minutes.
  2. In a bowl, mix rice vinegar, sesame oil, soy sauce, sugar, and minced garlic.
  3. Rinse cucumbers and drain excess water.
  4. Toss cucumbers with dressing and add sesame seeds and green onions.
  5. Serve immediately or chill in the refrigerator for 30 minutes.
