Easy Chicken Burrito Casserole

A delicious and easy-to-make chicken burrito casserole that the whole family will love!

Ingredients

  • 2 cups cooked shredded chicken
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 8 flour tortillas
  • 1 teaspoon cumin
  • 1 teaspoon chili powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine shredded chicken, black beans, corn, salsa, cumin, and chili powder.
  3. Layer the bottom of a baking dish with half of the tortillas, cutting them to fit.
  4. Spread half of the chicken mixture over the tortillas.
  5. Sprinkle half of the cheese on top.
  6. Repeat the layers with the remaining tortillas, chicken mixture, and cheese.
  7. Bake for 25-30 minutes, until the cheese is melted and bubbly.
  8. Let it cool for a few minutes before serving.

Notes

  • For a spicier dish, add jalapenos to the chicken mixture.
  • Use whole wheat tortillas for a healthier option.
