Eggplant Parmigiana

  • 2 large eggplants
  • 1 cup flour
  • 3 large eggs
  • 2 cups breadcrumbs
  • 4 cups marinara sauce
  • 2 cups mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 2 tablespoons fresh basil, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the eggplants into 1/4 inch rounds and sprinkle with salt. Let sit for 30 minutes to draw out moisture.
  3. Rinse and pat dry the eggplant slices.
  4. Set up a breading station with flour, beaten eggs, and breadcrumbs.
  5. Dip each eggplant slice in flour, then egg, and finally breadcrumbs.
  6. Fry the breaded eggplant slices until golden brown, about 3 minutes per side.
  7. In a baking dish, layer eggplant slices, marinara sauce, mozzarella, and Parmesan. Repeat layers.
  8. Top with any remaining cheese and bake for 30 minutes or until bubbly.
  9. Let cool for 10 minutes before serving, garnished with fresh basil.
