- 2 large eggplants
- 1 cup flour
- 3 large eggs
- 2 cups breadcrumbs
- 4 cups marinara sauce
- 2 cups mozzarella cheese, shredded
- 1 cup Parmesan cheese, grated
- 2 tablespoons fresh basil, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Preheat the oven to 375°F (190°C).
- Slice the eggplants into 1/4 inch rounds and sprinkle with salt. Let sit for 30 minutes to draw out moisture.
- Rinse and pat dry the eggplant slices.
