French Potato Salad

A deliciously tangy twist on traditional potato salad, featuring crispy turkey bacon and fresh herbs.

  • 2 pounds potatoes
  • 4 slices turkey bacon
  • 1/4 cup red onion, diced
  • 1/2 cup celery, chopped
  • 1/4 cup dill pickles, chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste

Instructions

  1. Start by boiling the potatoes until tender, about 15-20 minutes. Drain and let cool.
  2. Cook the turkey bacon in a skillet over medium heat until crispy. Remove and chop into pieces.
  3. In a large mixing bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, fresh dill, salt, and pepper.
  4. Once the potatoes have cooled, cut them into cubes and add them to the mixing bowl along with the cooked bacon, red onion, celery, and dill pickles.
  5. Gently mix everything until well combined. Adjust seasoning if necessary.
  6. Cover and refrigerate for at least 30 minutes before serving.

Notes

  • This salad can be made a day in advance for better flavor.
  • Feel free to add other ingredients, like hard-boiled eggs or peas.
