Guinness Chocolate Cake with Irish Buttercream

  • 1 cup unsweetened cocoa powder
  • 1 ¾ cups all-purpose flour
  • 2 cups granulated sugar
  • 1 ½ teaspoons baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 2 cups powdered sugar
  • ½ cup Irish cream liqueur

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, combine the Guinness and cocoa powder, mixing until smooth.
  3. In another bowl, whisk together the flour, sugar, baking soda, and salt.
  4. Add the chocolate mixture to the dry ingredients, then mix in the butter until well combined.
  5. Beat in the eggs and vanilla extract until the batter is smooth.
  6. Divide the batter between the prepared pans and bake for 30-35 minutes.
  7. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  8. For the frosting, beat together the butter and powdered sugar, then mix in the Irish cream liqueur until smooth.
  9. Frost the cooled cakes with the Irish Buttercream.
