  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a springform pan.
  3. In a large mixing bowl, beat the cream cheese and powdered sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in sour cream, lemon juice, and lemon zest until fully combined.
  6. Pour the cheesecake mixture over the crust in the springform pan.
  7. Bake for 50-60 minutes or until the center is set.
  8. Allow to cool, then refrigerate for at least 4 hours before serving.
