Moroccan Chicken & Rice

  • 1.5 pounds chicken thighs
  • 2 cups basmati rice
  • 4 cups chicken broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 tablespoon olive oil
  • 1 lemon, juiced
  • 1/4 cup raisins
  • 1/4 cup almonds, chopped
  • salt to taste
  • pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, cooking until soft.
  2. Add chicken thighs and brown on all sides.
  3. Stir in spices and cook for another minute until fragrant.
  4. Add rice, broth, lemon juice, raisins, salt, and pepper; bring to a boil.
  5. Reduce heat, cover, and simmer for 20-25 minutes, until rice is cooked and liquid is absorbed.
  6. Fluff rice with a fork before serving, and top with chopped almonds.

Notes

  • For extra flavor, marinate the chicken in spices for a few hours before cooking.
