Ingredients

  • 2 pounds ripe tomatoes
  • 1 medium onion
  • 4 cloves garlic
  • 3 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup heavy cream
  • 4 slices bread
  • 1 cup shredded cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Slice the tomatoes, onion, and garlic and place them on a baking sheet.
  3. Drizzle with olive oil and season with salt and pepper.
  4. Roast in the oven for 30 minutes.
  5. Transfer roasted vegetables to a pot, add vegetable broth and basil, and bring to a simmer.
  6. Blend the mixture until smooth, then stir in the heavy cream.
  7. Prepare the croutons by toasting the bread and topping with cheese, then broil until golden.
  8. Serve the soup hot, topped with cheesy croutons.
