  • 2 pounds chicken thighs
  • 1 cup yellow onion, diced
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 can (15 oz) crushed tomatoes
  • 1 cup coconut milk
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup cilantro, chopped for garnish

Instructions

  1. In a slow cooker, add the chicken thighs, diced onion, garlic, and ginger.
  2. In a bowl, mix the garam masala, turmeric, cumin, crushed tomatoes, coconut milk, butter, salt, and pepper. Pour over the chicken.
  3. Cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through and tender.
  4. Once done, shred the chicken with two forks and stir to combine with the sauce.
  5. Serve hot, garnished with chopped cilantro.
