- 2 pounds chicken thighs
- 1 cup yellow onion, diced
- 4 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons garam masala
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 can (15 oz) crushed tomatoes
- 1 cup coconut milk
- 2 tablespoons butter
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup cilantro, chopped for garnish
- In a slow cooker, add the chicken thighs, diced onion, garlic, and ginger.
- In a bowl, mix the garam masala, turmeric, cumin, crushed tomatoes, coconut milk, butter, salt, and pepper. Pour over the chicken.
