  • 4 fillets salmon
  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  3. Add fresh spinach and sauté until wilted.
  4. In a bowl, mix the sautéed spinach with feta cheese, lemon juice, salt, and pepper.
  5. Make a pocket in each salmon fillet and stuff it with the spinach and feta mixture.
  6. Place the stuffed salmon on a baking tray and bake for 15-20 minutes.
